Layers of a rich, cheese-like cream, golden lady fingers flavored with a black coffee soak and a complementary dusting of cocoa. The flavor combination is not a classic for no reason, the bitterness of the coffee + cocoa is soothed by the cream filling and sugar, resulting in something strong that still keeps you hooked for more. So here, it is the dessert's fluffy texture that I find most impressive. Who knew it could be possible without egg whites and heavy cream? Turns out aquafaba, silken tofu, coconut milk are just as magical.
In this post there is a recipe for some lovely vegan lady fingers, however, as a quick hack, I have seen some fabulous tiramisu made with plain vegan tea biscuits instead.
Ingredients (serves 8-12)
for the lady fingers
50g vegan butter
185g flour
60g cornstarch
1 tsp baking powder
1/4 tsp salt
90ml aquafaba
1 tsp lemon juice
125g sugar
1 tsp vanilla paste
for the cream filling
300g silken tofu
200g coconut cream (the thick stuff from the top of a coconut milk can)
70g sugar
200g vegan cream cheese
2 tsp lemon juice
1 tsp vanilla paste
for the coffee soak
260g strong coffee
Instructions
1. Preheat the oven to 390°F, prepare a piping bag for later and melt the vegan butter. Set it aside to cool.
2. Whisk together the flour, cornstarch, baking powder, baking soda and salt, set aside. Whip the aquafaba with the lemon juice until it forms stiff peaks, then, just like how you would make meringue, add the sugar, one spoonful at a time, until the aquafaba is shiny and thick.
3. Gently fold in 3/4 of the dry ingredients, then add the melted butter and vanilla before folding in the final 1/4 of the dry. Right when everything is homogenous, pipe the the mixture into 16 4in/10cm fingers. Dust the fingers with powdered sugar and bake for 14-20 minutes or until lightly golden.
4. Make the filling by combining everything in a blender and mixing until a smooth and fluffy consistency.
5. Finally, assemble! Layer, starting with a thin spread of cream, 8 lady fingers (dipped very briefly in the coffee), half the remaining cream, (an optional layer of cocoa powder or grated chocolate), 8 more coffee-dipped lady fingers, the rest of the cream, finally a generous dusting of cocoa powder and more maybe some more grated chocolate ;) For the best experience, chill in the tiramisu in the fridge for 2 days before slicing and serving.
