Bright, summery, luscious gelato... its still pretty cold but a bowl of this is compelling any day. The recipe is effortless and leaves you feeling very content :) I think it would work with any berry, maybe even a puree; mango or passion fruit would be lovely.



Ingredients (makes 6-8 servings)
400g coconut milk
200g almond milk
250g blackberries (fresh or frozen)
200g sugar
pinch of salt
2 1/2 Tbs cornstarch + 1/4 cup water
serve with more blackberries!
Instructions
1. Combine the milks, blackberries sugar and salt in a pot over medium high heat, let the mixture come to a boil and cook at a simmer until the blackberries have dissolved a bit (mashing them with a fork can help speed this up, should take 10+ minutes though).

2. Combine the cornstarch and water into a smooth paste, pour into the blackberry custard and stir constantly until it thickens. Transfer custard to a covered container, allow it to cool completely and refrigerate for a few hours or overnight.
3. Churn according to your machine's instructions and serve right away or store in the freezer.
