Vegan Mini French Toast Bites

These delectable and easy french toast bites can be whipped up really quick and will honestly make anyone happy. This recipe is super amazing, it uses firm tofu to replace that protein you would be getting from eggs as well as that texture. It cooks undifferentiated from traditional french toast and tastes even better! The leftover soaking mixture can be kept in the fridge for up to four days so it would be a perfect thing to meal prep and then have quick, fresh, french toast every morning!

I have another "vegan french toast" recipe on the blog, but really it's kinda it's own thing, it doesn't resemble french toast. It is essentially bread dipped in a seasoned plant based milk, coated in crunchy seeds, and cooked, which is so tasty, but not french toast. So, I have renamed it "Crunchy Vegan Breakfast Toast" 😄 Anyways, enjoy this awesome french toast, cheers!




 

Ingredients (serves 5-6)

 

One loaf of stale vegan tangzhong bao or vegan brioche or any bread you like!


1 cup plant based milk (240g)

4.5 oz firm tofu (130g)

1 Tbs vanilla extract

1 tsp cinnamon

pinch of salt

1-2 Tbs sugar (this is totally up to you, depending on how sweet your bread is and how sweet you like your french toast)


some optional seasonings;

- orange zest

- lemon zest

- nutmeg

- allspice

- cardamon


serve with whipped coconut cream and stewed berries, fresh fruit, a dusting of powdered sugar, marmalade, jam, or maple syrup

 

Instructions

 

1. Put all the ingredients (except for the bread) in a blender and blitz until smooth. Pour into a shallow dish. Slice the bread. Soak each piece for about 30 seconds per side.


2. Soak each piece for about 30 seconds per side. Cook in a greased fry pan, at medium heat, until golden brown on each side. Serve with desired toppings and enjoy!
