You can make these danishes with a homemade puff pastry or store bought, I have to say the homemade is quite a process to make but well worth it. Any fruit will be delicious, here I used some plums, pears, apple, strawberry and nectarine. My favorite would have to be the pear with custard and chocolate! Enjoy!
Ingredients (makes about 13 danishes)
for the custard
1 cup milk of choice (I used almond)
3 Tbs sugar
pinch of salt
3 Tbs coconut cream
2 Tbs cornstarch
2 tsp vanilla extract
1 1/2 Tbs butter
1 recipe of vegan puff pastry
fruit/chocolate of choice
2 Tbs milk of choice (I used almond)
1 Tbs aquafaba (chickpea water)
Instructions
1. To make the custard heat the milk, sugar and salt in a sauce pan on medium heat, whisking occasionally. In a small bowl mix the cornstarch with the coconut cream and vanilla extract. Once the milk is almost boiling remove it from the heat and add 1/3 cup of the hot milk to the cornstarch mix and stir. Then pour the cornstarch milk back into the pot with the rest of the milk and whisk until the mixture thickens.
2. Once the mixture thickens keep it on the heat for another minute before removing from the heat and whisking in the butter. Transfer the custard to a heat proof bowl and cover the custard with plastic wrap to prevent a skin from forming. Let it cool and place in the fridge until ready to use.
2. If you made your own pastry divide it in half and place one half in the fridge. Roll the other half into a large rectangle and use circular cutters to cut out a 8 disks form the rectangle.
3. Put the disks into the fridge and roll out the other half to end up with 16 disks. Cut a smaller circle out of 8 of the disks so you get a ring of pastry, match the rings up with a pastry circle. Mix the milk and aquafaba in a small bowl and use it to seal the pastry ring on top of the pastry circle. Repeat with all the pastry.
4. Place the pastry circles onto lined trays. Fill the pastry circles with custard and fruit and brush the rim with the milk mixture. Let the pastries rise for 45 minutes.
5. Bake in an oven preheated to 400F for 25-30 minutes or until golden brown. Best eaten the the day they were baked!
