These are some delish, classic chocolate chip cookies. They are moist (I tested some very dry cookies), the smell is incredible, and the carmelization on the outside is so yummy!
Ingredients (makes 16 cookies)
1/2 cup vegan butter or margarine
1 Tbs golden syrup
1/2 cup brown sugar
1/3 cup white sugar
1 flax egg
2/3 cup walnuts
1/2 cup oat flour (I just blended 1/2 cup oats into a flour)
1 cup flour
1/4 tsp kosher salt
1/4 tsp cream of tarter
1/2 tsp baking soda
1 cup chocolate chips or chunks
Instructions
1. Preheat oven to 375F. Place the walnuts on a tray and toast for about 5 minutes. Set aside to cool. Switch the oven temperature to 330F.
2. Cream the butter, syrup, and sugars in a large bowl. Add the flax egg. Beat until fluffy.
3. Add the flours, cream of tarter, and baking soda. Chop the toasted walnuts and add it along with the chocolate. Line trays with baking parchment and use a cookie scoop to made even balls of cookie dough. Bake for 10 minutes or until lightly golden. Allow 5 minutes of cooling on the tray and then transfer to a wire rack. Enjoy!!!
