These shiny, beautiful gems are wonderful dessert toppers that are super fast and simple to make. The caramel coating is thin, crunchy and perfectly complements the peanuts. WARNING; they taste absolutely incredible and are highly addictive so proceed with caution.
Ingredients (makes about 30 caramel peanuts)*
2 Tbs sugar + 2 tsp water
1/2 tsp vegan butter
about 30 lightly salted, roasted, peanuts
*this recipe can be easily doubled, tripled, etc.
Instructions
1. Line a cookie sheet with parchment paper.
2. Combine the sugar and water in a small sauce pan and cook on high heat, until the mixture reaches 250°F or turns a very light golden color. Lower the heat to medium and add in the butter, cook for another couple minutes until it reaches 290°F or darkens into your desired golden color. Keep the heat on really low (just to prevent the caramel from hardening) and dip in the peanuts, I found it easiest to remove them with tweezers, but you can try it with a spoon, fork or some tongs. Place the peanuts on the tray to cool. Once hardened, serve! These are great on (or in) ice cream, cakes, cookies, etc.
