With caramelized edges, a soft, fluffy center and juicy bites of spiced apples, these certainly make it to being one of my top three favorite cookies (kinda amazing cause they don't include any chocolate!). You'll love them too; they are so simple to make and will disappear within seconds wherever you take them.
If you are looking for bigger cookies, just use more dough and expect to have to bake them for longer.
Instructions (for about 35 small cookies)
115g vegan butter
170g sugar
57g apple sauce
1 tsp vanilla paste
1/2 of an apple, chopped in small cubes
170g flour
1/2 tsp salt
2 tsp baking powder
roll in
3 Tbs sugar + 1 tsp cinnamon + 1/2 tsp ginger
Instructions
1. Cream together the butter and sugar until pale and fluffy, mix in the apple sauce, vanilla, and apple. Then fold in the flour, salt and baking powder and mix until the dough comes together. Chill covered in the fridge for 30 minutes or overnight.
2. Preheat the oven to 180°C and line a baking tray with parchment paper. Divide the dough into Tablespoon-sized balls, roll in the spiced sugar and bake for 12 minutes or golden brown but not completely set in the center (it is good for the cookie to still look a bit shiny in the middle).
3. Allow the cookies to cool on the tray for 5 minutes before transferring to a cooling rack. Store in an airtight container at room temperature for a week.
