This creamy vegan pudding is incredibly simple and delicious. Serve with blackberries and lime juice to make the perfect refreshing treat. Your guests will be so impressed!
Ingredients (serves 5)
1 1/2 cup milk of choice ( I used almond milk but coconut milk would probably be delicious as well)
1/4 cup sugar
1 Tbs cornstarch + 2 Tbs milk
1/4 cup tapioca pearls (not instant tapioca)
1/8 tsp salt
Blackberries and lime juice to garnish
Instructions
1. In a 1 quart sauce pan combine the milk, tapioca pearls and salt. On medium high heat, bring the mixture up to a simmer while stirring frequently. Once the mixture is bubbling turn the heat down to low and cook until the mix thickens and the pearls are soft. Test by tasting a pearl. This could take anywhere from 5 - 45 minutes, depending on the tapioca you bought.
2. While the tapioca is cooking combine the cornstarch and milk in a small bowl.
3. Once the tapioca is done cooking pour the cornstarch mix into the pot and cook on medium high until the mix is at a simmer. When you see it begin to thicken immediately remove from heat.
6. Chill for 4 hours and serve. Enjoy!!
