Vegan Fruit Pizza

After making lots of cake I had some leftover frosting. I told people that they could have it on toast and it would be like nutella or jam... none of it was eaten.😌 I really didn't want to waste it but I was having trouble coming up with a solution.

My sister announced she wanted to make fruit pizza but she didn't have some of the ingredients it called for, I suggested she use some leftover pistachio lemon frosting. She did and it turned out amazing! I recreated the pizza (because we had so much leftover frosting), got some pictures and here it is! I hope this idea will help you use up any leftover frosting! Enjoy.







 

Ingredients (makes 3 small pizzas)

 

480g pizza dough

90g frosting

40g vegan cream cheese*

40g vegan mascarpone*

1 tsp vanilla

Fruit, frozen or fresh

 

*if you only have cream cheese or you only have mascarpone you can substitute them for each other (so if you only have cream cheese just to 80g of it)

 

Instructions

 

1. Preheat the oven to 500f with a pizza stone in it. Divide the pizza dough into three balls (160g each).

2. Beat together the frosting, cream cheese, mascarpone, and vanilla. Roll/stretch out the a pizza dough ball.

3. Once the oven has preheated and the stone is really hot, put the dough on it and bake in the oven for

1-2 minutes. Remove from the oven and spread on a third the frosting mixture. Bake for another 3-5 minutes until the crust is golden. Transfer the pizza onto a cooling rack. Repeat the cooking process with the remaining dough. Top with fruit and enjoy! Serve warm or cold.
