These scrumptious Swedish treats are the perfect as a breakfast, snack or coffee break (fika)! The sweet, soft, spicy, warmth of them will make your day!
Ingredients
Dough
1 cup (225ml) warm milk
2 Tbs (40g) maple syrup
2 1/4 (7g) tsp yeast
3 cups (390) flour
1/4 cup (32g) powdered coconut or soy milk*
1 tsp salt
1 tsp ground cardamom
1/3 cup (75g) vegan butter, softened and cubed
Filling
1/3 cup (75g) vegan butter, softened
1/2 cup brown sugar
1 1/2 tsp ground cardamom
1 tsp cinnamon
1/4 tsp salt
maple syrup for glazing (optional)
*if you can't find any powdered non-dairy milks its OK to skip the ingredient, it just adds richness and is not necessary
Instructions
1. Mix together warm milk, honey and yeast. Let the mix sit for 5 minutes to activate the yeast,
2. Into a standing mixer with a dough hook or a bread machine add all the ingredients including the yeast mixture, except for the butter. Mix until everything is combined and then kneed for 10 minutes.
3. Put dough back into the mixer and gradually add the cubed butter, mix well after each addition.
4. Once the dough is smooth and all the butter has been added, transfer it to a large greased bowl. Cover with a damp cloth and let it rise until doubled in size.
5. To make the filling cream together the butter, brown sugar, cardamom, cinnamon and salt.
5. Once dough has risen, roll it out on a floured surface into a 14x 21 inch rectangle.
6. Evenly spread the filling onto the dough.
7. Now, to create some layers of buttery goodness, fold the dough by placing the end farthest from you to the middle and the end closest to you over it.
8. Roll out the layered dough until its a large rectangle again and using a pizza cutter or a knife cut it into 8-10 strips. Each strip should be about 1 inch. Then cut each strip in half (length wise) leaving about an inch at the top where it hasn't been cut.
9. While holding the top of the strip where the dough hasn't been cut twist the halves. Then hold the uncut part between your 2 fingers and thumb weave the twisted dough around your 2 fingers, then between your 2 fingers.
10. Take the dough off your hand and tuck the end of the strip underneath. Place on a lined baking tray and cover with a damp cloth. Let the buns sit for about 20 minutes, or at this stage put them in the fridge overnight and bake them the next day.
11. Preheat oven to 350f or 175c. Bake for around 30 minutes or until they are golden brown.
12. Right when they come out of the oven brush with maple syrup and serve warm! Enjoy!
