Poblano Peppers Stuffed with Jackfruit (Vegan)

You will be blow away by all the flavors that come from these simple beautiful ingredients. The unusual part of the recipe is the charring of the peppers; this technique provides a wonderful smokey and spicy taste. So, don't skip this step!

The peppers are stuffed with a crispy jackfruit rice mix that I could eat by the bucketful. It is spiced and cooked to perfection and the texture resembles something similar to pulled meat.

This makes for a fantastic side dish or maybe a main served with something like black beans. Enjoy!




 

Ingredients (makes 5 stuffed peppers)

 

5 fresh poblano peppers


Can of jackfruit (20 oz), drained, rinsed and dried

1 Tbs olive oil

Half an onion, diced

4 cloves of garlic, minced

3 slices of pickled jalapeños, minced (or more/less depending on how spicy you want it)

1 tbs soy sauce


Salt to taste

1 tsp cumin

1 tsp oregano

1/2 tsp sugar


1 1/2 cup cooked white rice

1/2 cup shredded vegan mozzarella


 

Instructions

 

1. Char the peppers over an open flame, this is often done over the flames of a gas stove. I did it over our camping stove. They should blister and get burnt skin all over. Set them aside to cool off.


2. Prepare the jackfruit by slicing it into small pieces. Then heat up 1 Tbs of the oil in a large pan and cook the onions, once they are just beginning to brown, add the garlic and jalapeños and cook until the garlic is golden. Toss in the jackfruit and soy sauce, stir well and then lower the heat. Cook uncovered for 3-5 minutes to evaporate the moisture. Add the remaining 1 Tbs of oil and the salt, cumin, oregano, and sugar. Let the jackfruit caramelize and get nice and crispy.


3. Take the jackfruit off the heat and mix it in with the rice and mozzarella. Peel the skins off the peppers (dispose of the skins), set the oven to broil. Slice the peppers in half and remove the stem/seeds. Fill the peppers with the rice/jackfruit mix and sprinkle the top with some extra cheese (optional). Broil the peppers for 3-4 minutes to brown the cheese and melt the flavors.
