After buying 6 pounds of fava beans, pods and all, we had to come up with a dish for them that showcased all their deliciousness. So we went the simple route, a pasta dish. Now even though the process is super easy and simple, the flavors really pack a punch.

Ingredients (serves 5 generous portions)
roughly 3 cups of prepped fava beans (6lbs when they are still in the pods)
12 oz pasta
3 Tbs olive oil
4 cloves garlic, diced
1 tomato, chopped
2 tsp fresh oregano
1 tsp fresh basil
salt and pepper to taste
1 large handful of kale, chard or spinach, cut into 1/2" strips
might need more olive oil
Instructions
1. In the same pot you blanched the beans in boil the pasta.
2. In a separate large pot heat up the olive oil until it is shimmery, then add the diced garlic. Saute on medium high heat until it is golden, then add the chopped tomato, fava beans, oregano, basil, salt and pepper. Cook everything for about 3 minutes, by then the pasta should be done. Drain it and add it to the fava bean mix. After everything is incorporated add the kale and turn off the heat. Now you can add a bit more olive oil and stir the kale around until it wilts. Serve and enjoy! Store in the fridge.
