Baked Samosas

These are the most delicious baked samosas ever! With the crispy outside pastry and scrumptious potato and pea filling, you and your friends and family are sure to enjoy them!


 

Ingredients (makes 20)

 

The pastry

2 cups flour

3 Tbs olive oil

10 Tbs water

1 tsp salt

The filling

2 tbs olive oil

5 large boiled potatoes, cut into cubes

1 cup of peas

2 tsp cumin seeds

1 tsp fennel seeds

1 tsp crushed coriander seeds

1 tsp garam masala

1 tsp grated ginger

1/4 tsp red chili powder *optional

pinch of salt

 

Instructions

 

1. In a medium bowl add the flour, salt, and oil. Rub the oil in with your fingers until it becomes a sand like texture. One tablespoon at a time add the water, mixing with one hand. Once the dough has come together, cover with a tea towel and set it aside.

2. In a pan on medium high heat, heat up the oil. Add the cumin, fennel and crushed coriander seeds. Let the seeds sizzle for about 30 seconds and then add the cubed potatoes, ginger, garam masala and chili flakes. Cook for 1 min and then add the peas and salt to taste.

3. Preheat oven to 350F

4. Divide the dough evenly into 10 parts. Shape each into a ball. Roll each ball into a circle, the dough should be quite thin. Cut the circle in half. Using your finger, brush water in a line onto half of the length of the straight part you just cut. Fold the side that you didn't brush with water in towards the water side. Then using your finger press them together. Now you should have a cone sealed together with water. Holding the cone with one hand, spoon the filling in. Brush the rim of the cone with water and pinch together to seal. One samosa done! Repeat with the rest.

5. Generously brush the samosa with olive oil and bake for 30-35 minutes or until golden brown.

6. Enjoy! Keep in the fridge.
