Vegan Banana Bread Pudding (KOTLC style)

My siblings and I are a big fan of the book Keeper of The Lost Cities. They read about a breakfast, Sophie,(the main character) had in the first book that was described as an orange goop that tastes like warm, buttery banana bread. When they asked me to make this 'goop' for their breakfast the first idea I had was to make banana bread and just leave it at that, then I thought of doing a bread pudding. After testing this recipe and being impressed by the results I decided to share it with you, so here is a recipe for an orange goop that tastes like warm, buttery banana bread. Enjoy;)


This one I dyed orange.

I left some uncolored, top with peanut butter, more bananas and maybe some maple syrup! Yum.

 

Ingredients (makes 4 servings)

 

2 slices of 1" thick, day old, Vegan Brioche

1/3 cup toasted chopped walnuts

2/3 cup plant milk (I used almond)

2 ripe bananas

2 Tbs brown sugar

1 tsp vanilla

1 tsp cornstarch

1 tsp cinnamon

1/4 tsp allspice*

1 tsp ground chia or flax seeds

1/4 tsp baking powder

1/4 cup pre-soaked oats**

pinch of salt

2 drops of orange food dye (optional of course)

 

*the allspice makes the pudding taste super warm and yummy

** I just soaked about 3 Tbs of oats overnight in some water, and then drained them, they make the pudding more nutritious and filling

 

Instructions

 

1. Preheat the oven to 350 F.

2. Slice the brioche into large cubes and set aside. Using an immersion blender or food processor, blitz up one of the bananas, milk, brown sugar, vanilla, cornstarch, cinnamon, allspice, chia, oats and salt. Slice the second banana and add it to a bowl along with the brioche, walnuts and the thick milk mixture.

3. Gently mix everything together with a spoon to makes sure the bread is evenly coated in the milk. Evenly divide the mix into four individual ramekins or just into a 8" square pan. Bake for 20-30 minutes, depending on how goopy you want your pudding.
