Granola

This recipe is extremely easy to make, and to change depending on the ingredients you have on hand. It is also a sure way to make your kitchen smell incredible! You will not be able to look at store bought granola the same after tasting the homemade version. This recipe is gluten free and vegan.



 

Ingredients (makes about 10 cups of granola)

 

*you can switch out the types of nuts and seeds you use depending on what you like/have on hand

730g oats (8 cups)

1/2 cup hazelnuts, roughly chopped

3 Tbs sunflower seeds

3 Tbs pumpkin seeds

1/4 cup coconut flakes

1 cup pecans, roughly chopped

1 cup walnuts, roughly chopped

115g coconut oil (1/2 cup)

1/4 cup water (40g)

1/2 cup maple syrup (130g)

1 tsp vanilla

3 tsp cinnamon

1 tsp salt

 

Instructions

 

1. Preheat oven to 350F or 175C

2. In a very large bowl combine the oats, nuts and seeds.

3. In a small sauce pan, on medium heat melt together the maple syrup, coconut oil, water, vanilla, cinnamon and salt. Cook until the coconut oil is melted, then pour the syrup over the oats mix and toss to get everything coated in the syrup.

4. Evenly spread the granola out on baking sheets and bake for about 20 minutes or until golden brown, rotating halfway through to ensure even browning.

5. Keep this granola in an air-tight container for up to a month. Enjoy!
