These apple muffins are so fluffy because of the reaction caused by the baking soda and apple cider vinegar so once combined you have to bake them right away. They are sweetened by banana and a dash of brown sugar which creates a beautiful smell while baking! The apple mixed with the light spices equals a wonderful flavored muffin. Enjoy!
Ingredients (makes 24 mini muffins)
2 1/3 cup flour
3 Tbs brown sugar
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp allspice
1 large very ripe banana, mashed
2/3 cup almond milk, at room temp
2 Tbs apple cider vinegar
1/4 cup coconut oil, melted
1 1/2 cup chopped apple
Instructions
1. Preheat oven to 350F. Grease or line muffin tin.
2. In a large mixing bowl sift together the flour, brown sugar, baking soda, salt, cinnamon, and allspice.
3. In a separate bowl mash the banana and add the milk, apple cider vinegar and coconut oil.
4. Pour the wet ingredients into the dry and mix together, then add the apple and quickly divide the batter into the muffin tins and bake for 20-25 minute or until a toothpick comes out clean.
5. Allow the muffins to cool completely on a wire rack and then transfer to an airtight container. Enjoy!
