Banana Walnut Muffins

Whip up these muffins on a lazy Saturday morning and your whole house will smell amazing! These muffins have a very tender crumb and an awesome banana flavor. I like to make them with thawed frozen bananas that way they will be more sweet. Enjoy!



 

Ingredients (makes 16 large muffins)

 

1 cup walnuts

3 thawed frozen bananas

1/4 cup brown sugar

1/2 cup vegan yogurt

1 tsp vanilla

1/4 cup melted coconut oil or vegan butter

1 flax egg*

2 cups flour

1 tsp baking powder

1/2 tsp baking soda

1 tsp kosher salt

1 tsp cinnamon

 

*if you aren't vegan a normal egg will work just fine :)

 

Instructions

 

1. Preheat the oven to 375 F. Line or grease muffin tins.

2. Pour the walnuts onto a tray and toast them for around 5-7 minutes or until they are golden and the skins are peeling off. Set aside to cool.

3. Mix together the bananas, brown sugar, yogurt, vanilla and coconut oil. Sift in the flour, baking powder, baking soda, salt, and cinnamon. Mix to combine and roughly chop the walnuts before mixing them in.

4. Fill the muffin tins and bake for about 15 min or until a toothpick inserted comes out clean. Serve warm from the oven :)
