This is a deliciously spiced rice dish that can be made in a rush. It takes just one pan and voilà! You have a vegan side that can pair with anything from chana masala to split pea curry.
Ingredients (serves 6)
1 small onion
2 Tbs curry powder
dash of cinnamon and cardamon
500g cauliflower
250g long grain rice
750ml vegetable stock
3 bay leaves
top with chopped cilantro
Instructions
1. Heat up a pan with a drizzle of oil, fry the onion until it begins to brown. Add in the spices and cook for 30 seconds before stirring in the cauliflower and rice.
2. Cook for 3 minutes and then toss in the bay leaves and vegetable stock. Bring to a boil and then reduce the heat and cook until the rice is tender, about 15 minutes. Top with fresh cilantro.
